1. Chocolate Skillet Cake
4 tablespoons cacao powder (1oz)
2 tablespoons hemp protein powder (1/2oz)
1 tablespoon coconut sugar
1 teaspoon peppermint extract
1 tablespoon coconut oil (1/2 oz)
3 tablespoons avocado puree (1 3/4oz)
*few drops stevia if you want it sweet (optional)
pinch sea salt (optional)
Directions
Preheat oven to 350 degrees. In a bowl place cocoa, hemp protein, sea salt, stevia if using, coconut sugar. Mix together. Next, add in coconut oil, peppermint essential oil or extract, and avocado puree. Continue to mix together. The batter will be a little thick. Spoon brownie batter into a coconut oil greased 5 inch cast iron skillet. Bake for 8 minutes. Remove from oven and top with ice cream of choice. Or eat plain!
2. Banana Hemp Protein Waffles
1 banana
2 whole eggs
1/2 teaspoon baking powder
1 teaspoon coconut oil
2-3 tablespoon hemp protein powder
1 tablespoon gelatin (optional)
Directions
Blend all ingredients in a blender. Pour batter into waffle maker. Or make pancakes. Top with maple syrup. Makes 2 large waffles serves 1
3. Pumpkin Bars
2 eggs
1/4 cup coconut oil
3/4 cup pumpkin puree (6 oz)
2 tablespoons pumpkin seed butter
1/3 coconut sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 cup hemp protein powder (2 oz)
1/4 cup arrowroot (1 oz)
1/4 cup coconut flour (1 oz)
Directions
Pre-heat oven to 350 degrees. Place pumpkin puree, eggs, and pumpkin seed butter in a bowl and mix together. Add in coconut sugar, spices, baking soda, and flours into the bowl. Mix together. Add in coconut oil. Stir until blended. Grease a 8 in x 8 in square pan with coconut oil. Spread pumpkin bar batter into a pan. Bake for 15 - 20 minutes. Let cool.
